Haitian cuisine is like the flowing together of two or three streams and rivers.  It is a confluence of many culinary styles.  It is a spicy combination of African, French, Spanish, and Amerindian cooking traditions.  Now that Haiti has become ‘the Republic of NGOs (Non-governmental Organizations), there is also the influence of food traditions from other countries of the world.  Haiti has a rich culinary history.  Haitian cooks or chefs prepare dishes that are not only delectable to the eyes but also to the palate. 

Everyday the chic restaurants of Port-au-Prince, Delmas, Petionville, Kenskoff, Jacmel, Cap-Haitien, Jeremie, Les Cayes, Petit-Goave, Grand-Goave, Hinche, Gonaives, St Marc etc are busy with well-offs, diplomats, NGO professionals, bureaucrats, government officials, and tourists.  Wherever you go in Haiti, you will find these amazing eateries that serve specialities such as akra (Malanga fritters), pate or flaky Haitian patties, pikliz or spicy coleslaw, pickled slaw, (pickled shredded cabbage, carrots, onions, shallots, and habanero peppers), griot or fried pork, diri kole ak pwa rouj or red beans with rice, Poulet en sauce, chicken and gravy, legumes (a traditional Haitian dish of braised vegetables and meat such as beef and turkey, pork, crabs, ribs, conch meat, and the favorite oxtail cooked for two (2) hours); Ji papay or papaya juice; other tropical and exotic fruits and vegetables such as cachiman kebek (anona reticulate, mamon in Spanish, Bullock’s heart, custard apple), guanabana or corosol etc.

You will have an opportunity to experience Creole cooking and lifestyle.  Creole cooking represents the combination of French, Spanish, African, and indigenous Amerindian cuisines. 

Labapen (Creole) / Châtaigne  (French) / Chestnuts (English):  Haitian chestnuts are roasted and boiled and eaten as a snack.

Kachiman (Creole) / Cachiman (French) / Custard Apple (English) – Native to Haiti’s Taino and Arawak Indians, this fruit is the finest and most flavorful fruit of the region. 

Franbwaz (Creole) / Framboise (French) / Dewberry – It is a Haitian raspberry.  It is eaten fresh and used to make preserves. 

Djon-Djon Mushrooms are tiny black brown mushrooms which have an exquisite aroma.  When soaked in water, they release a black coloring which gives rice and meats a distinctive color, aroma, and flavor.

Berejèn (Creole) / Aubergine (French) / Eggplant – Haitians use eggplant in meat and seafood dishes called Legumes / Legim (creole).  The Arabs and Persians brought them to Africa.  Then the Europeans brought them and the African slaves to Hispanola during the the slave trade.

It is all about sex, lies, money, lots of money in cash, possible drug dealing and money laundering! This new development may be the break that DSK needed to prove his innocence. DSK and his lawyers are expected to show up in court tomorrow to talk to the judge in light of the discoveries made by the investigators. His lawyers may ask for some reduced charges and freedom. In the meantime, the whole case may be collapsing... Three New York Times reporters wrote, "...According to the two officials, the woman had a phone conversation with an incarcerated man within a day of her encounter with Mr. Strauss-Kahn in which she discussed the possible benefits of pursuing the charges against him. The conversation was recorded. That man, the investigators learned, had been arrested on charges of possessing 400 pounds of marijuana. He is among a number of individuals who made multiple cash deposits, totaling around $100,000, into the woman’s bank account over the last two years. The deposits were made in Arizona, Georgia, New York and Pennsylvania. The investigators also learned that she was paying hundreds of dollars every month in phone charges to five companies. The woman had insisted she had only one phone and said she knew nothing about the deposits except that they were made by a man she described as her fiancé and his friends. In addition, one of the officials said, she told investigators that her application for asylum included mention of a previous rape, but there was no such account in the application. She also told them that she had been subjected to genital mutilation, but her account to the investigators differed from what was contained in the asylum application....."

Le Monde rapporte: “Les accusations de crimes sexuels à l'encontre de Dominique Strauss-Kahn sont sur le point de s'effondrer, affirme le New York Times, jeudi 30 juin. Citant deux enquêteurs non identifiés, le quotidien américain écrit que le bureau du procureur ne croit plus guère en la version de Nafissatou Diallo, la femme de chambre guinéenne de l'hôtel Sofitel, âgée de 32 ans. Celle-ci aurait menti à plusieurs reprises depuis son agression présumée le 14 mai, non pas sur les accusations de viol mais sur son passé. Les analyses d'ADN auraient révélé qu'il y a bel et bien eu relation sexuelle entre la plaignante et l'ex-directeur général du FMI. Les procureurs ont, selon les sources du New York Times, évoqué de possibles liens de Mme Diallo avec des activités criminelles, dont celles de trafic de drogue et de blanchiment d'argent. Selon les deux enquêteurs cités par le journal, Mme Diallo a téléphoné à un détenu dans les 24 heures qui ont suivi sa rencontre avec Dominique Strauss-Kahn. Au cours de cette conversation, qui a été enregistrée, elle a évoqué le profit qu'il y aurait à maintenir ses accusations contre DS "Les enquêteurs ont découvert des failles importantes dans la crédibilité de la femme de chambre", écrit le journal. Le Nouvel Observateur ecrit: “Dépots en liquide Les enquêteurs ont fait des découvertes sur la demande d'asile aux Etats-Unis de la femme de ménage et sur des liens non-confirmés à des activités criminelles, comme une possible implication dans du blanchiment d'argent et du trafic de drogue, affirme le journal. Plusieurs individus ont fait des dépots en liquide - d'un montant total d'environ 100.000 dollars - sur son compte en banque ces deux dernières années, selon la même source.

Le Parisien.Fr a annoncé que le dossier d’accusation serait sur le point de s’effondrer: Nafissatou Diallo, victime présumée de Dominique Strauss-Kahn, Aurait eu une Relation avec un traffiqueur de Drogues. Selon le quotidien américain The New York Times, le dossier d'accusation contre DSK serait sur le point de «s'effondrer» (collapse) à cause des «gros doutes sur la crédibilité de la femme de chambre». Les journalistes américains Jim Dwyer, William K. Rashbaum and John Eligon citent deux enquêteurs pour soutenir leur affirmation et démontrer que l'accusation doute des déclarations de Nafissatou, dont le nom n'a jamais été dévoilé par les médias américains. Mensonges, trafic de drogue, écoutes téléphoniques L'accusatrice de DSK a «eu une conversation téléphonique avec un détenu moins d'un jour après sa rencontre avec M. Strauss-Kahn, au cours de laquelle elle a discuté de l'intérêt de poursuivre les accusations» contre l'ancien ministre français. La conversation a été enregistrée, précise le NYT. Par ailleurs des sommes d'argent évaluées à Lui et d'autres individus ont déposé, au cours des deux dernières années, de l'argent liquide, pour un total de 100.000 dollars, sur le compte en banque de la femme de chambre âgée de 32 ans, rapporte le journal. Cette dernière paie chaque mois plusieurs centaines de dollars à plusieurs compagnies de téléphone, ajoute le NYT. C'est donc toute la crédibilité du dossier d'accusation qui est ébranlé.
